Brazilian Braised Chicken And Bananas Recipe
BRAZILIAN BRAISED CHICKEN AND BANANAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Boron Estate in Carrollton, Texas in 1986.

Ingredients
  • 4 pounds chicken thighs and legs attached
  • 1/4 cup fresh lemon juice
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons vegetable oil
  • 1 medium white onion chopped
  • 6 plum tomatoes seeded and chopped
  • 1/8 teaspoon granulated sugar
  • 1 cup dry white wine
  • 1/2 cup chicken broth
  • 3 tablespoons butter
  • 6 firm ripe bananas halved lengthwise
  • 1/2 cup grated parmesan cheese

Directions
  1. Rinse chicken and pat dry with paper towels then rub it all over with lemon juice,
  2. Sprinkle with salt and pepper.
  3. In a deep heavy skillet or Dutch oven with a lid heat oil over medium heat.
  4. Brown chicken on all sides until golden brown then remove from skillet and keep warm.
  5. Add onion, tomatoes and sugar to pan and cook stirring until soft.
  6. Return chicken pieces to pan then add wine and broth and bring to a simmer.
  7. Lower heat and cover pan then simmer 45 minutes then set aside and keep warm.
  8. In another large skillet heat butter and sauté banana halves on both sides until golden brown.
  9. Arrange bananas on top of chicken in skillet and sprinkle them with the parmesan.
  10. Turn heat on low then cover and cook just until cheese melts.
  11. Use a large spatula to transfer the chicken with banana on top to plates then serve immediately.
