Seafood Ceviche Recipe
This recipe goes well with rice, vegetables or bread. Hope you like it. We can't seem to keep it around long.

Ingredients
  • 3 lobster tails
  • 1 large bag of shrimp peeled & deveined ( 30 medium to large)
  • 1 8oz. can jumbo lump crab meat.
  • 16 oz. jar roasted peppers
  • 1 medium green pepper
  • 1 medium yellow pepper
  • 1 medium red pepper
  • 1 large purple onion
  • 2 tbsps miced garlic
  • 1 16 oz. jar salad olives with roasted pepper in middle.
  • plenty of virgin olive oil and vinegar to taste more vinegarette
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Directions
  1. Steam lobster tails (10 mins.) Let cool.
  2. Steam shrimps (1 min.) Let cool.
  3. Cut tails and shrimp into small pieces and add crab meat.
  4. Place in a glass jar.
  5. Dice the roasted peppers along with all other peppers and onion.
  6. Add minced garlic and salad olives.
  7. Add salt and pepper.
  8. Add olive oil and vinegar to cover all seafood.
  9. Store in jar with lid for a few days.
  10. Serve cold out of the fridge.
