What if you could get the texture of cream sauce with the low cost, low fat, fiber and protein of legumes? This recipe is a great dairy-free, soy-free, meat-free pasta sauce.

Ingredients
  • 1 cup any combination white or garbanzo bean or sweet pea puree
  • 1 cup tomato sauce
  • 2 1/2 Tablespoons olive oil
  • 1/4 cup onion, minced
  • 1 clove garlic, minced (1/2 t pre-minced)
  • 1 Tablespoon (yes Tablespoon) dried basil leaves
  • 1 t white sugar (I use evaporated cane juice)
  • 1/2 t Italian seasoning
  • 1/4 t dried oregano
  • 1/4 t salt
  • 1/8 t ground black or white pepper

Directions
  1. Blend together bean/pea puree and tomato sauce.
  2. Sautee onion and garlic in olive oil on medium-low until onion is translucent.
  3. Add spices to onion and garlic and sautee for three minutes more.
  4. Add Bean/tomato puree to sautee and heat until simmering
  5. Simmer five to ten minutes.
  6. Serve over pasta or preferred carbohydrate.
