How to make it

  • Combine tomatoes with canned stewed tomatoes in large saucepan over medium heat.
  • Cook 10 minutes stirring constantly until stewed tomatoes begin to disintegrate.
  • Add finely mashed garlic and cook an additional 2 minutes.
  • Add tomato sauce and cayenne then stir to blend and toss in thyme sprig.
  • Cook another 2 minutes and taste for seasoning then set aside to cool.
  • Cool for half an hour on counter then remove thyme sprig and process in blender.
  • Store in airtight container in refrigerator.
  • To serve add lemon juice and stir and add finely diced cucumber.
  • Garnish each bowl with diced tomato and thyme leaves.
