Spicy Chilled Tomato Soup

- 3 pounds roma tomatoes seeded and diced shopping list
- 28 ounce can stewed tomatoes shopping list
- 29 ounce can tomato sauce shopping list
- 1 cucumber peeled cored and finely diced shopping list
- 1 teaspoon cayenne pepper shopping list
- 2 garlic cloves finely mashed shopping list
- 1 sprig fresh thyme shopping list
- 2 large lemons shopping list
How to make it
- Combine tomatoes with canned stewed tomatoes in large saucepan over medium heat.
- Cook 10 minutes stirring constantly until stewed tomatoes begin to disintegrate.
- Add finely mashed garlic and cook an additional 2 minutes.
- Add tomato sauce and cayenne then stir to blend and toss in thyme sprig.
- Cook another 2 minutes and taste for seasoning then set aside to cool.
- Cool for half an hour on counter then remove thyme sprig and process in blender.
- Store in airtight container in refrigerator.
- To serve add lemon juice and stir and add finely diced cucumber.
- Garnish each bowl with diced tomato and thyme leaves.
