How to make it

  • Slice peaches in half and remove stone then heat a skillet over medium heat.
  • Add all butter and when it stops bubbling and water is evaporated add sugar and cinnamon.
  • Heat until sugar forms a slurry then remove from heat and keep warm with lid on.
  • Set peaches onto sheet pan cut side up and using a pastry brush coat flesh with butter mixture.
  • Take them to the grill and place cut side down over medium hot fire.
  • Grill until grill marks appear and peaches begin to soften.
  • Reheat skillet over medium heat.
  • When mixture just begins to bubble remove from heat and deglaze pan with schnapps.
  • When peaches have solid grill marks flip over and grill about 1 minute on round side.
  • Remove from grill and put four peach halves in bowl and spoon butter mixture over them.
  • Put two scoops of ice cream into each bowl and sprinkle with pecans.
