Ingredients
  • One Lobster
  • Mojo Sauce – recipe follows
  • Salad greens
  • Mango vinaigrette – recipe follows
  • one mango, sliced
  • plantains, sliced thin, fried in oil
  • Boil lobster for 2 minutes. Chill immediately in ice water, split, remove claws. Remove tail meat (should be partially raw) and cut into bite-size pieces. Save lobster shell for presentation. skewer tail meat pieces and just barely opaque. Brush with mojo sauce.
  • Serve with salad greens dressed with mango vinaigrette, mango slices and crisp-fried plantains (green plantains sliced thin, fried in oil). Serve extra mojo sauce in hollowed out mango or avocado.

Directions
  1. Mojo Sauce
  2. 1 cup fresh orange juice
  3. 1/2 cup fresh lime juice
  4. 1 mango
  5. Zest from 2 oranges and 2 limes
  6. 2 tbsp sugar
  7. 1 teaspoons garlic
  8. 1 Tablespoon roasted garlic
  9. 1 cup melted butter
  10. 1 teaspoon Asian chili paste or more to taste
  11. Salt and pepper to taste
  12. Puree all ingredients in blender. Heat in sauce pan to simmer to all sauce to slightly thicken.
  13. Mango Vinaigrette Dressing
  14. 1 whole mango
  15. juice and zest from 1 orange
  16. juice and zest from 2 limes
  17. 1 teaspoon sugar
  18. 1/4 cup apple cider vinegar
  19. 1/4 cup canola oil
  20. salt and pepper to taste
  21. Puree all ingredients in blender.
