How to make it

  • In large saucepan heat oil then sauté onions and garlic over medium heat until golden.
  • Add marjoram, basil, sage and paprika then mix well.
  • Stir in tomatoes with juice, stock and rice then bring to simmer.
  • Reduce heat to low and cook uncovered for 30 minutes.
  • Just before serving stir in spinach and cook another 5 minutes.
  • Season with salt and pepper then ladle into bowl and sprinkle with cheese and pine nuts.
