Ingredients
  • 2 lbs. parsnips
  • 1 tsp, salt
  • 3 tbs. butter or Earth Balance
  • ⅓ cup heavy cream or soy creamer
  • salt & pepper

Directions
  1. Peel parsnips and roughly chop them.
  2. Cover with water and add salt.
  3. Bring to a boil, cover, and cook slowly for 7-10 minutes or until tender.
  4. Drain. Puree with butter in a food mill or processor. Add cream and season to taste.
