Smoked Pork Chops With Chipotle Honey Sauce Recipe
SMOKED PORK CHOPS WITH CHIPOTLE HONEY SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Bateman Estate in Wills Point, Texas in 1985.

Ingredients
  • 2 smoked pork chops
  • 1 tablespoon olive oil
  • 1 medium sweet onion finely diced
  • 1 cup ketchup
  • 1/4 cup cider vinegar
  • 1 tablespoon puréed chipotle in adobo sauce
  • 1/8 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Directions
  1. Bring chops to room temperature then heat oil in large skillet over medium heat.
  2. Cook onion until translucent then season chops with salt and pepper.
  3. Add chops to skillet and brown on both sides for two minutes per side.
  4. Remove chops from pan and set aside.
  5. In small bowl combine remaining ingredients then add to skillet.
  6. Return chops to pan then turn chops to coat both sides with sauce and simmer 5 minutes.

Thanks for these good recepies - now i know something else i can do with the Chipotle i have, usually put it with noodles or rice - nice and hot.
