Herb Roasted Pork With Caramelized Onions Recipe
HERB CRUSTED PORK WITH CARAMELIZED ONIONS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Rinsley Estate in Waxahachie, Texas in 1994.

Ingredients
  • 3 pound boneless pork roast
  • 2 tablespoons horseradish mustard
  • 1 tablespoon prepared yellow mustard
  • 1/2 teaspoon dried grated orange peel
  • 3 tablespoons Cajun seasoning divided
  • 1 teaspoon crushed rosemary
  • 3 yellow onions peeled and sliced
  • 1 cup baby carrots chopped

Directions
  1. Combine mustards and orange peel in small bowl.
  2. Using a pastry brush spread mustards lightly over pork roast.
  3. Sprinkle 2 tablespoons Cajun rub and crushed rosemary over roast.
  4. Wrap with food film and refrigerate at least one hour or up to four hours.
  5. Preheat oven to 425 and bring roast to room temperature and sprinkle with remaining rub.
  6. Spread sliced onions and chopped carrots on bottom of lightly greased roasting pan.
  7. Put roast in roasting pan and cook 30 minutes then reduce heat to 350.
  8. Continue roasting until roast reaches an internal temperature of 155 about 45 minutes.
  9. Remove from oven and keep warm then allow to rest 10 minutes before slicing.
  10. Serve with caramelized onions and carrots as garnish.
