Turnips With Apples And Leeks

- 4 tablespoons vegan margarine shopping list
- 2 lbs. turnip, peeled and cut into 3/4 inch cubes shopping list
- 2 leeks, medium sized, cleaned, halved and sliced shopping list
- 2 apples, firm, tart shopping list
- ½ cup fruity white wine, such as Riesling or Moscati shopping list
- 1 teaspoon succanat or brown sugar shopping list
- 1 sprig thyme shopping list
- pinch salt shopping list
- pinch pepper shopping list
How to make it
- Melt the margarine in a wide skillet over medium heat.
- Add the turnips and saute until they begin to brown, about 7 minutes.
- When the leeks begin to soften, add the apples and cook for 2 minutes longer.
- Add the wine and cook until the liquid is reduced to 2 tablespoons.
- Add 1/2 cup of water, sugar, thyme, salt and pepper and simmer until the turnips are nearly soft, about 5 or 10 minutes longer.
- Remove them to a bowl with a slotted spoon.
- Turn the liquid to high and reduce the liquid until it is thick enough to coat the vegetables. Adjust the seasonings.
