Steamed Salmon And Asparagus With Walnut Vinaigrette Recipe
STEAMED SALMON AND ASPARAGUS WITH WALNUT VINAIGRETTE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Almond Estate in Grand Prairie, Texas in 1992.

Ingredients
  • 4 salmon fillets
  • 3/4 pound asparagus trimmed
  • 1-1/3 pound small red potatoes washed and cut in quarters
  • 1 cup honey Dijon vinaigrette
  • 1/2 cup finely chopped walnuts

Directions
  1. In a three tier bamboo steamer place salmon in one basket.
  2. Place potatoes in second basket and asparagus in third.
  3. Set over boiling water and steam 15 minutes.
  4. Combine vinaigrette and nuts in saucepan over medium heat.
  5. Stir to blend and heat until hot but not boiling.
  6. Serve warm sauce over salmon, asparagus and potatoes.
