THREE PEPPER BAKED CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Brimley Estate in Garland, Texas in 1999.

Ingredients
  • 6 boneless skinless chicken breast halves
  • 1 medium red bell pepper cut into strips
  • 1 medium green bell pepper cut into strips
  • 1 medium yellow bell pepper cut into strips
  • 3/4 cup slivered red onion
  • 1 tablespoon vegetable oil
  • 1 cup chunky salsa
  • 1 teaspoon ground cumin
  • 1 cup pepper jack cheese
  • Chopped cilantro

Directions
  1. Place chicken in single layer in lightly greased baking dish and sprinkle with salt.
  2. In skillet cook and stir peppers in onion in oil until tender then stir in salsa and cumin.
  3. Spoon mixture over chicken then cover dish tightly with foil.
  4. Bake at 350 for 30 minutes then remove foil and sprinkle with cheese.
  5. Bake uncovered 5 minutes to allow cheese to melt then sprinkle with cilantro and serve.
