How to make it

  • Drain corn well. Place in bowl
  • Add Avocado, onion, and carrots
  • Coat well with dressing, more or less as desired
  • Cover and let stand in fridge for at least an hour
  • Serve with all your summer meals
  • Hint: For every 2 cans of Mexican Corn use 1 Avocado
