Scrumptious Summer Corn Salad

- 2 cans Mexican corn shopping list
- 1 ripe but not over ripe avocado cut into bite size pieces shopping list
- 1/2 red onion chopped as desired shopping list
- 1 or 2 carrots chopped as desired shopping list
- Caesar Dressing shopping list
How to make it
- Drain corn well. Place in bowl
- Add Avocado, onion, and carrots
- Coat well with dressing, more or less as desired
- Cover and let stand in fridge for at least an hour
- Serve with all your summer meals
- Hint: For every 2 cans of Mexican Corn use 1 Avocado
