Pork Chops With Potatoes And Vinegar Peppers Recipe

Ingredients
  • 8 med. red potatoes,cut in quarters
  • 4 thick pork rib or loin chops(on the bone)
  • salt and pepper to taste
  • 2Tbs olive oil
  • 1 large onion,thinly sliced
  • 1c bottled vinegar peppers(with their juice)
  • 2Tbs fresh chopped parsley

Directions
  1. Set steamer insert inside large saucepot and fill it with water up to the steamer. Place the potatoes in the pan ,cover with lid and bring to a boil. Turn heat to med. and steam potatoes just till tender when pierced with fork but not falling apart. Remove from pan.
  2. Set oven to 400. Sprinkle chops with salt and pepper;set aside
  3. In large skillet with heatproof handle,heat oil and cook chops over med-high heat on both sides till they are brown. Remove from pan.
  4. Add onion slices and cook over med heat,stirring often,for 10 mins. Slit the peppers and let juices run into the pan. Add peppers and stir into the onions.
  5. Return chops to pan. Spoon onions and peppers on top of them. Arrange the potatoes around the meat. Transfer the skilet to hot oven and cook the pork for 10 mins. or till cooked through. Sprinkle with parsley. Serve at once
