How to make it

  • Spray large skillet with nonstick cooking spray
  • heat over medium high heat
  • add shrimp and 1/2 cup green onions, peas and mushrooms
  • cook 5 minutes
  • reduce heat to medium low
  • add coconut milk, sour cream and rice noodles.
  • Stir
  • Simmer 5 minutes
  • Add cashews and coconut
  • stir
  • Top with remaining green onions and serve.
