How to make it

  • Slice onions very thin.
  • Heat half of the olive oil in large saucepan.
  • Add onions and 2 tablespoons hot water, salt and pepper.
  • Cover and cook over low heat 15 minutes.
  • Add anchovies and cook another 5 minutes.
  • Add remaining olive oil then remove from heat and keep warm.
  • Bring 4 quarts water to a boil then add 1 tablespoon salt and cook linguini al dente.
  • Drain and put into a warmed serving bowl.
  • Dress with onion sauce tossing well then serve with grated parmesan cheese.
