LINGUINI WITH ONION SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Devane Estate in Dallas, Texas in 1982.

Ingredients
  • 2 medium white onions
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper
  • 4 anchovy fillets chopped
  • 1 pound linguini
  • 1/4 cup grated Parmesan cheese

Directions
  1. Slice onions very thin.
  2. Heat half of the olive oil in large saucepan.
  3. Add onions and 2 tablespoons hot water, salt and pepper.
  4. Cover and cook over low heat 15 minutes.
  5. Add anchovies and cook another 5 minutes.
  6. Add remaining olive oil then remove from heat and keep warm.
  7. Bring 4 quarts water to a boil then add 1 tablespoon salt and cook linguini al dente.
  8. Drain and put into a warmed serving bowl.
  9. Dress with onion sauce tossing well then serve with grated parmesan cheese.
