SPICY CHEESY SKILLET SUMMER SQUASH DATED 1962 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Perez Estate in San Antonio, Texas in 1988. Another tried and true regular in my household.

Ingredients
  • 5 cubed small summer squash
  • 1 large white onion diced
  • 2 roasted peeled green chilies
  • 1 tablespoon shortening
  • 1 cup shredded longhorn cheese

Directions
  1. Sauté onion in shortening until soft then add squash and stir until almost tender.
  2. Add chilies and simmer briefly then sprinkle on cheese and stir until melted.
