Ingredients
  • 2 tbsp matcha green tea powder
  • 1/3 cup hot water
  • 3 egg yolks
  • 2/3 cup sugar
  • 3/4 cup vanilla soy milk
  • 3/4 cup skim milk
  • 1 1/2 cup table cream, 18%

Directions
  1. Dissolve the green tea powder in hot water.
  2. In another bowl, combine the egg yolks and sugar.
  3. Gradually stir in the soy milk and skim milk.
  4. Cook on low until thickened, stirring constantly. It will be the texture of a bisque.
  5. Cool in the fridge, about half an hour.
  6. Choose a long dish, so that the mixture will be about 1/2 inch deep in the dish. Chill the dish.
  7. Remove the pot from the fridge and stir in the table cream and green tea.
  8. Pour into the chilled dish and freeze three hours.
  9. Scoop into a mixing bowl and blend with an electric blender until smooth.
  10. Return to long dish and place in freezer until frozen through.
