This wonderful soup will become a family favorite!

Ingredients
  • 2 lb. of chopped carrots
  • 4 c. of vegetable broth
  • 2 c. of water
  • 2 tbsp. of vegetable oil
  • 1 chopped onion
  • 1 tbsp. of curry powder

Directions
  1. Take some olive oil over medium flame.
  2. Saute the onions until yellow and tender.
  3. Next you want to add carrots and stir.
  4. Slowly pour the stock and let this simmer until carrots are tender(20 min)
  5. In your blender, pour the mixture in and puree.
  6. Finally, pour into the pot and simmer.
  7. You can add water if needed!
