How to make it

  • Heat oil in a nonstick skillet over medium high heat. Add onion and saute till soft. Combine thyme and 1/4 tsp salt; sprinkle over chicken. Add chicken to skillet; saute 6 minutes per side or until done. Remove chicken to a plate. Reduce heat to medium low. Add 1/4 tsp salt, vinegar, preserves, and pepper to skillet, stirring constantly until preserves melt. Pour over chicken.
