Pasta With Smoked Salmon Cream And Dill Recipe
I love tossed pasta dishes and this is a very nice one for spring. It's out of the Bon Appetit Scotland issue. I like the recipe with a bit more dill in it than is suggested, but I'm used to eating a lot of dill.

  • 9 oz penne
  • 3 T butter
  • 12 oz smoked salmon, cut into ½ " strips
  • 1 c + 1 T whipping cream
  • 1 tsp tomato paste
  • 3 tsp chopped fresh dill, divided
  • 1/8 tsp cayenne pepper

Directions
  1. Cook pasta in a large pot of salted, boiling water, until al dente, stirring occasionally. Drain, reserving ¼ c cooking liquid.
  2. Meanwhile, melt butter in a heavy large skillet over medium heat. Add salmon and cook until fish turns light pink, stirring frequently, about 2 minutes. Stir in cream and tomato paste. Cook until sauce is heated through, about 2 minutes. Stir in 2 tsp dill and cayenne pepper. Mix pasta into sauce, adding pasta cooking liquid by tablespoon as needed to moisten. Divide pasta among 4 shallow bowls. Sprinkle with remaining dill and serve.
