Alaska Salmon And Avocado Pasta Salad Recipe
This is a very nice salad that I have had on numerous occasions. It is a recipe I obtained from a church friend over ten years ago. It is especially good on a hot summer day. Enjoy

Ingredients
  • 6 ounces dry bow tie pasta
  • 14-3/4 ounce Alaskan salmon
  • 2 tablespoons French dressing
  • 1 red bell pepper thinly sliced
  • 3 tablespoons cilantro chopped
  • 1 lime juiced and rind grated
  • 1 tablespoon tomato paste
  • 1/2 cup sour cream
  • 1/8 teaspoon paprika
  • 1 bunch green onions thinly sliced
  • 2 tablespoons mayonnaise
  • 3 ripe avocados diced
  • Lettuce leaves

Directions
  1. Cook pasta according to package directions then drain and toss with dressing then allow to cool.
  2. Drain and flake the salmon then add to pasta with onions, bell pepper and cilantro.
  3. Whisk together lime juice, rind, mayonnaise, sour cream and tomato paste until combined.
  4. Toss pasta salad with dressing then season with salt and pepper then cover and chill.
  5. Before serving gently toss avocados into the salad and spoon onto a bed of lettuce leaves.
  6. Sprinkle with paprika for garnish then serve immediately.
