SALMON FILLET WITH PAPAYA AVOCADO SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Grimes Estate in Bryan, Texas in 1988.

Ingredients
  • 1 medium ripe papaya cut into 1/2" pieces
  • 1 large ripe avocado cut into 1/2" pieces
  • 6 tablespoons fresh lime juice
  • 2 Serrano chili peppers shredded and finely chopped
  • 1/2 cup fresh cilantro leaves
  • 5 scallions finely chopped
  • 1 medium red bell pepper seeded and chopped
  • 1/4 teaspoon salt
  • 1/2 pound salmon fillet
  • Olive Oil

Directions
  1. Prepare salsa in a medium bowl by combining papaya and avocado.
  2. Add lime juice and toss gently to coat then add chilies, cilantro, scallions and bell pepper.
  3. Toss gently then season to taste with salt and set aside.
  4. In large nonstick skillet heat oil over high heat.
  5. Add salmon slices and cook over medium high heat 30 seconds on each side.
  6. To serve arrange salmon slices on individual serving plates.
  7. Garnish with slices of papaya and avocado then serve salsa on the side.
