Carrot and Coriander Soup

- 3 (28 ounce) cans of roma tomatoes, with juice shopping list
- 1 c. of vegetable stock shopping list
- 1 handful of chopped fresh cilantro shopping list
- 2 tbsp. of balsamic vinegar shopping list
- 1 tbsp. of white sugar shopping list
- 1 tbsp. of brown sauce shopping list
- 1 tbsp. of worcestershire sauce shopping list
- 1 tbsp. of olive oil shopping list
- 2 chopped large onions shopping list
- 5 medium chopped carrots shopping list
- 2 cloves of chopped garlic shopping list
- 1 chopped fresh red chile pepper shopping list
- a pinch salt and pepper shopping list
- 1 c. of heavy cream shopping list
How to make it
- Take some olive oil in a pot over medium flame.
- Saute the onions, carrots, garlic and the pepper until they are soft.
- Next you will add in the tomatoes, stock, one half of the cilantro, balsamic vinegar, sugar, brown sauce, and then the Worcestershire sauce. Sprinkle in your salt and pepper to taste.
- Let the soup come to a boil, then bring the flame down for another 30 min.
- In your food processor, add the mixture and puree.
- When this is creamy, add back to our pot over medium flame.
- Just before serving, add cream and cilantro!
