Pan Grilled Bruschetta Pomodoro

- 1 large tomato, seeded and diced fine shopping list
- ¼ tsp lemon juice shopping list
- ½ tsp fresh thyme shopping list
- salt and pepper, to taste shopping list
- 4 small or 2 large bias-cut slices baguette bread shopping list
- 2 tsp olive oil shopping list
- 1 large clove garlic, halved shopping list
How to make it
- Preheat a grill pan over high heat.
- Combine chopped tomato, lemon juice, thyme and seasoning in a small bowl, set aside.
- Lightly brush each side of the baguette slices with olive oil.
- Place slices on the grill pan and cook without moving 1 minute.
- Flip slices and cook one minute further, until toasty brown.
- Immediately rub one side of each slice with the cut side of garlic.
- Top each slice with equal amounts of the tomato mixture and serve immediately.
