How to make it

  • soak the glass noodles in cold water until softened about 10 minutes.
  • put the lemongrass and the lime leaves into a teabag or tea ball. these are used for flavor and not eating.
  • while soaking the noodles add a tablespoon or two of vegetable oil to the bottom of a pot over medium heat.
  • add the shallots and ginger to the pot and cook three minutes.
  • now add the garlic, stir, then the water, mushrooms, and noodles cooking about five minutes.
  • squeeze the lime juice in and remove the tea bag or ball the leaves and lemongrass are in. you can toss these.
  • now you'll season the soup to taste with the soy, and sambal olek. when serving garnish with cilantro leaves.
