Hearty Slow-cooker Stew Recipe
A very hearty one-pot-meal recipe I found on a Motoring website of all places, it sounded good so I tried it out and loved it. This is my version as the original had no measurements at all.

Ingredients
  • 1 415g/ 14oz can of Baxters Royal Game Soup
  • Approx 2lbs of diced Stewing beef
  • 1 can Guinness/ Stout or your favorite ale type beer
  • 1lb swede
  • 1lb carrots
  • 1 1/2lb potatos
  • 1/2lb onions
  • 1/4lb parsnips (my addition, as I love them!)
  • 3-4 cloves of garlic
  • gravy browning
  • 2 tsp dried mixed herbs
  • salt and pepper to season
  • oil or butter for browning beef and onions
  • 2 tbsp HP sauce

Directions
  1. Peel and coarsely chop the vegetables and crush the garlic cloves. Add to the slow-cooker.
  2. Fry off the chopped onion and add to the cooker.
  3. Brown the beef and add to the cooker.
  4. Add all other ingredients except the salt and pepper for final seasoning and cook on a med/ low setting for 8 hrs

Hi and thanks! When I make this again I might try Oxtail soup rather than the Royal Game, I found it rather bland, hence the additional sauce and lots of garlic. These measures filled my 6 Litre slowcooker, the 8 servings are very generous 'man-sized' plates of stew, you could easily get 12-14 servings if adding extra side veggies or bread-rolls.
