How to make it

  • Bring a little water to the boil in a saucepan. Add the potato and simmer for 5 minutes or till soft. Drain, transfer to a bowl and put in fridge to cool.
  • Meanwhile, bring 2 cups of water to a boil in a small saucepan and boil egg for 3 minutes, crack and peel shell and chop egg.
  • Blend mayonnaise and cream in a bowl. Add potato when cool, and egg, and stir to coat potato. Season with salt and pepper and garnish with chives. Bon Appetite
