How to make it

  • In bowl combine pasta, bell pepper, onion and celery then stir well.
  • In separate bowl toss avocados with lemon juice and add to salad along with shrimp.
  • Cover and refrigerate several hours.
  • Combine all ingredients and whisk well until blended.
  • Add 1 cup dressing, salt and pepper then mix well 1 hour before serving.
  • Line a platter with lettuce and mound salad on top then garnish with eggs and serve immediately.
