SCALLOP PENNE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Parnell Estate in Tyler, Texas in 1984.

Ingredients
  • 1/2 pound scallops
  • 1 pound penne pasta cooked al dente
  • 1 clove garlic
  • 1 tablespoon dried basil
  • 1/2 cup tomatoes diced
  • 1/2 cup chicken stock
  • 1/4 cup milk mixed with 1 tablespoon cornstarch
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon onion powder
  • 2 tablespoons parmesan cheese

Directions
  1. Season scallops with spices and sauté in preheated skillet 2 minutes then add garlic.
  2. Sauté until cooked through then add stock and simmer 5 minutes to reduce.
  3. Add milk and cornstarch mixture to thicken then remove from heat.
  4. Add pasta, tomatoes, basil and cheese then toss well and serve immediately.
