Ingredients
  • 8 C. grated cassava
  • 3 ¼ c. sugar
  • 6 whole eggs
  • 1 can evaporated milk
  • 2 c. grated young coconut meat
  • 1 c. grated cheese
  • ¼ c. melted butter
  • 3 ½ c. coconut milk (2nd extraction)
  • TOPPING:
  • 1 can condensed milk
  • 2 egg yolks
  • 2 TBSP. All purpose flour
  • 1 c. coconut milk (1st extraction)

Directions
  1. Mix everything together except for the topping. Bake in 2 greased and lined with aluminum foil 9"pans for 45 minutes at 350 degrees F.
  2. For the topping:
  3. Cook over low fire until thick. Pour over the cooked cassava cake, broil until golden brown.
