Easy Healthy Enchiladas

- 3/4 big can black refried beans shopping list
- 1 1/2 cup salsa shopping list
- 2 smaller cans green enchilada sauce shopping list
- 4 Tbs (low fat) cream cheese shopping list
- 2 cups mozzerella shopping list
- 3 cloves garlic shopping list
- 4 tortillas shopping list
- 1 tsp Lawry's seas. salt shopping list
- dallop of sour cream shopping list
How to make it
- Pre-heat oven to 350'
- Simmer on medium heat both the salsa and beans
- Sprinkle with seasoning and continue to simmer for appx 15 min.
- Lay out tortillas and spread 1 Tbs cream cheese on each
- When bean sauce is done spoon 1/4 cup or more on each shell
- Sprinkle 1/4 cup cheese on top of each shell
- Fold in corners and roll up
- Place each in a sprayed/oiled baking dish
- Top with enchilada sauce and remaining cheese
- Bake for 35-40 min until edges are barely crispy and browned
- serve with a dallop of (low fat) sour cream
