Easy Healthy Enchiladas Recipe
I am a big fan of food in general, but i like to try to keep the pounds off. This is one of my attempts to do so.

Ingredients
  • 3/4 big can black refried beans
  • 1 1/2 cup salsa
  • 2 smaller cans green enchilada sauce
  • 4 Tbs (low fat) cream cheese
  • 2 cups mozzerella
  • 3 cloves garlic
  • 4 tortillas
  • 1 tsp Lawry's seas. salt
  • dallop of sour cream

Directions
  1. Pre-heat oven to 350'
  2. Simmer on medium heat both the salsa and beans
  3. Sprinkle with seasoning and continue to simmer for appx 15 min.
  4. Lay out tortillas and spread 1 Tbs cream cheese on each
  5. When bean sauce is done spoon 1/4 cup or more on each shell
  6. Sprinkle 1/4 cup cheese on top of each shell
  7. Fold in corners and roll up
  8. Place each in a sprayed/oiled baking dish
  9. Top with enchilada sauce and remaining cheese
  10. Bake for 35-40 min until edges are barely crispy and browned
  11. serve with a dallop of (low fat) sour cream
