How to make it

  • Pre-heat oven to 350'
  • Simmer on medium heat both the salsa and beans
  • Sprinkle with seasoning and continue to simmer for appx 15 min.
  • Lay out tortillas and spread 1 Tbs cream cheese on each
  • When bean sauce is done spoon 1/4 cup or more on each shell
  • Sprinkle 1/4 cup cheese on top of each shell
  • Fold in corners and roll up
  • Place each in a sprayed/oiled baking dish
  • Top with enchilada sauce and remaining cheese
  • Bake for 35-40 min until edges are barely crispy and browned
  • serve with a dallop of (low fat) sour cream
