Pasta Zucchini Shrimp Alfredo Recipe
PASTA ZUCCHINI SHRIMP ALFREDO This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Marcello Estate in Denton, Texas in 1984.

Ingredients
  • 2 medium zucchini
  • 8 ounces medium shrimp
  • 2 medium tomatoes
  • 12 ounces spaghetti
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3/4 cup plus 2 tablespoons Alfredo sauce
  • Chopped parsley
  • Grated Parmesan cheese

Directions
  1. Bring 3 quarts lightly salted water to a boil in a covered large pot.
  2. Quarter zucchini lengthwise then slice crosswise.
  3. Peel and devein shrimp then seed and dice tomatoes.
  4. Add pasta to boiling water and cook uncovered stirring often for seven minutes.
  5. Add zucchini and cook until pasta is firm tender and zucchini is tender about 3 minutes longer.
  6. Drain in a colander then while pasta is cooking heat oil in skillet over medium high heat.
  7. Add shrimp, salt and pepper then sauté until shrimp turns pink.
  8. Add drained pasta, zucchini, tomatoes and sauce then stir gently until blended and heated.
  9. Sprinkle with parsley and serve immediately with grated parmesan cheese.
