a Fabulous non-Dairy Cheesecakey flavor and feel and taste. (and much faster than cheesecake) This is a great recipe for the Dairy intolerant. Everyone loves it!

Ingredients
  • Crust
  • 5 T butter, softened
  • 1/2 cup brown sugar
  • 1/3--1/2 cups chopped nuts (I used sunflower seeds--Yes!!)
  • 1 cup flour (I used graham flour)
  • FILLING
  • 1/2 cup sugar
  • 8 oz cream cheese (I use "Better Than Creamcheese" tofutti brand)
  • 1 egg
  • 2 T milk ( I use Silk soy milk or rice milk)
  • 1 T fresh lemon juice
  • 1 T grated lemon peel
  • 1/4 tsp. vanilla

Directions
  1. Pre-heat oven to 350 degrees F
  2. Prep an 8 inch or 9 inch square pan with non-stick spray
  3. Crust:
  4. Cream butter and brown sugar. Add the nuts and flour and mix thoroughly. Set aside 1 cup of the mixture for the topping. Press the remainder in the prepped pan.
  5. Bake 12-15 minutes or until golden brown.
  6. Filling: Blend sugar and cream cheese until smooth. Add the egg, milk, lemon peel, lemon juice and the vanilla, Beat well, 'til very smooth. Spread over cooled crust. Sprinkle with the topping.
  7. Return to the oven and bake an additional 10 to 15 minutes. Cool.
  8. Cut into bars. 30-48 bars.
