Tinks Lemon Cheesecake Bars Tweaked

- Crust shopping list
- 5 T butter, softened shopping list
- 1/2 cup brown sugar shopping list
- 1/3--1/2 cups chopped nuts (I used sunflower seeds--Yes!!) shopping list
- 1 cup flour (I used graham flour) shopping list
- FILLING shopping list
- 1/2 cup sugar shopping list
- 8 oz cream cheese (I use "Better Than Creamcheese" tofutti brand) shopping list
- 1 egg shopping list
- 2 T milk ( I use Silk soy milk or rice milk) shopping list
- 1 T fresh lemon juice shopping list
- 1 T grated lemon peel shopping list
- 1/4 tsp. vanilla shopping list
How to make it
- Pre-heat oven to 350 degrees F
- Prep an 8 inch or 9 inch square pan with non-stick spray
- Crust:
- Cream butter and brown sugar. Add the nuts and flour and mix thoroughly. Set aside 1 cup of the mixture for the topping. Press the remainder in the prepped pan.
- Bake 12-15 minutes or until golden brown.
- Filling: Blend sugar and cream cheese until smooth. Add the egg, milk, lemon peel, lemon juice and the vanilla, Beat well, 'til very smooth. Spread over cooled crust. Sprinkle with the topping.
- Return to the oven and bake an additional 10 to 15 minutes. Cool.
- Cut into bars. 30-48 bars.
