Surpreme Pizza Soup

- 2 Tbl olive oil shopping list
- 1/2 lb. bulk Italian sausage shopping list
- 1 pkg. stick pepperoni, casing removed and diced (6 oz) shopping list
- 2 c. button mushrooms, halved shopping list
- 1 c. red onion, diced shopping list
- 1/2 c. red bell pepper, diced shopping list
- 1/2 c. green bell pepper shopping list
- 1 Tbl. garlic, minced shopping list
- 1 tsp. italian seasoning shopping list
- 1/2 sp. red pepper flakes shopping list
- salt and pepper to taste shopping list
- 3 cans diced tomatoes in juice (14.5 oz) shopping list
- 1 c. chicken broth shopping list
- 1/4 c. canned black olives, halved shopping list
How to make it
- Brown sausage and pepperoni in oil over medium-high heat, about 5 minutes. Remove from pot and drain on paper towels. Pour off all but 1 Tbl. drippings and return pot to burner.
- Add mushrooms and saute until they release their juices, about 3 minutes. Add onion, bell peppers, garlic and seasonings; cook until veggies are soft, about 5minutes.
- Stir in remaining ingredients along with the reserved meat mixture. Simmer soup until heated through, 10-12 minutes.
