Don't fight with your kids to eat good, just trick them. This pizza soup has all the flavor they love, but it's loaded with fresh veggies. Great served with cheesy garlic bread.

Ingredients
  • 2 Tbl olive oil
  • 1/2 lb. bulk Italian sausage
  • 1 pkg. stick pepperoni, casing removed and diced (6 oz)
  • 2 c. button mushrooms, halved
  • 1 c. red onion, diced
  • 1/2 c. red bell pepper, diced
  • 1/2 c. green bell pepper
  • 1 Tbl. garlic, minced
  • 1 tsp. Italian seasoning
  • 1/2 sp. red pepper flakes
  • salt and pepper to taste
  • 3 cans diced tomatoes in juice (14.5 oz)
  • 1 c. chicken broth
  • 1/4 c. canned black olives, halved

Directions
  1. Brown sausage and pepperoni in oil over medium-high heat, about 5 minutes. Remove from pot and drain on paper towels. Pour off all but 1 Tbl. drippings and return pot to burner.
  2. Add mushrooms and saute until they release their juices, about 3 minutes. Add onion, bell peppers, garlic and seasonings; cook until veggies are soft, about 5minutes.
  3. Stir in remaining ingredients along with the reserved meat mixture. Simmer soup until heated through, 10-12 minutes.
