How to make it

  • Peel the waxy skin off the turnips.
  • Cut into 1 inch cubes.
  • Boil in water for 25 mins (optional, add salt to water).
  • Drain.
  • Add cream, salt, pepper and butter.
  • Mash with hand mixer until smooth.
  • Be sure not to overcook the turnips; they will absorb too much water!Optional: Top with crispy shallots - slice thinly and pan fry on medium high heat in 1tsb olive oil and 1 tsb butter for 30 mins.
