You don't need a mixer with this recipe it's so simple to make. One of my good friends gave this recipe to me after I eat about half the plate at a potluck lunch. Sure made a few people grumpy! ;0)

Ingredients
  • 2/3 cups butter
  • 2 cups light brown sugar
  • 3 eggs
  • 2 1/3 cups self rising flour
  • 1 cup raisins - soak raisins in water to soften. Drain well.
  • 1 cup chopped pecans
  • 3/4 cups chocolate chips
  • 1 cup coconut

Directions
  1. Preheat oven to 350 degrees
  2. In a large bowl melt the butter in microwave
  3. Stir in the brown sugar and allow to cool a few minutes.
  4. Add the eggs one at a time
  5. Stir in the self rising flour a little at a time.
  6. Stir in remaining ingredients
  7. Note: You only want to blend these ingredients together, that is why it is best not to use a mixer.
  8. Spread the batter in a teflon coated or a very lightly greased 9x13 baking dish.
  9. Bake for approx. 35-40 minutes (depends on type pan you use)
  10. Cool and cut into bars.
