I always make mashed potatoes, turnip greens, pinto beans and cornbread with this dish

Ingredients
  • 1 Lb. ground beef
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1 can diced tomatoes
  • 1 1/2 to 2 cans water
  • 3/4 cup rice
  • salt & pepper to taste

Directions
  1. Brown ground beef, onions and bell pepper until done. Drain off excess grease.
  2. Pour in diced tomatoes and 1 1/2 can water.
  3. Stir in rice, salt and pepper
  4. Bring to a boil. Turn heat down to med-high and cook until rice is done and water is absorbed.
  5. * Can add more water as needed.
