How to make it

  • Preheat oven to 190 deg C.
  • Lightly beat the egg whites
  • Add milk, yoghurt and juice
  • Add grated apple, lemon juice and rind, currants, sultanas and prunes to mixture. Combine well.
  • Mix together the flour, rolled oats, baking powder and spices in a seperate bowl.
  • Add the dry mix to the wet mix.
  • Spoon into muffin pans and bake for 25 minutes.
