High Fibre Muffins

- 2 egg whites shopping list
- 125ml skim milk shopping list
- 1/4 cup plain low-fat yoghurt shopping list
- 2 tablespoons orange juice shopping list
- 2 tablespoons grated apple shopping list
- juice and rind of 1/2 a lemon shopping list
- 2 tablespoons currants shopping list
- 2 tablespoons sultanas shopping list
- 6 prunes (chopped) shopping list
- 1 1/2 teaspoon baking powder shopping list
- 5 rounded tablespoons wholemeal flour shopping list
- 75g rolled oats shopping list
- 1/2 teaspoon cinnamon shopping list
- 1/4 teaspoon allspice shopping list
How to make it
- Preheat oven to 190 deg C.
- Lightly beat the egg whites
- Add milk, yoghurt and juice
- Add grated apple, lemon juice and rind, currants, sultanas and prunes to mixture. Combine well.
- Mix together the flour, rolled oats, baking powder and spices in a seperate bowl.
- Add the dry mix to the wet mix.
- Spoon into muffin pans and bake for 25 minutes.
