How to make it

  • -- debone the carcass
  • -- simmer chunked turkey in a covered pan with lots of butter, pepper
  • and a splash of left over gavy.
  • -- while that is on low, take out your collected bacon grease (this is assuming
  • you have been straining and draining your bacon grease into a coffee tin from
  • the last twelve saturdays and keeping it in the fridge)
  • -- place the cold grease in a dutch oven or deep fryer and pour the heat to it.
  • -- slice up some 'Yukon Gold' potatoes (washed but NOT skinned) and place in a
  • pail or pot of water and a good cup of white vinegar, swishing the fries in
  • with it until starch is visibly off the taters.
  • -- deep fry those fries until golden brown then pat dry with paper towel.
  • -- reheat all the left over gravy, (add a can of any gravy if uncle jed drank
  • most of the roast gravy the night before).
  • -- place a slab of fresh white sourdough bread on the plate topping with the
  • simmered turkey followed by a top slab of bread and throw the fries beside it.
  • -- sprinkle shredded havarti cheese or fresh white curd on the fries then smother
  • both the sandwich and fries with that mouth watering gravy mixture.
  • -- if there is room on your plate, add a side of can corn, beans or oily chick peas.
  • ****A WORD OF CAUTION**
  • make sure you are wearing your track pants cuz this is a belt buster!!!!
