Guerreros Ceviche Tostadas

- 2lbs med or large shrimp (peeled & deveined) shopping list
- 2lbs seafood mix(fresh if possible) shopping list
- 1/2 lb baby octopus(optional, already in seafood mix, but this fresher) shopping list
- 2 cans abalone shopping list
- 2 1/2lbs of imitation crab meat chopped shopping list
- 1/2 cup chopped red onion shopping list
- 1 cup chopped cilantro shopping list
- 1cup chopped red tomatoe med size cuts shopping list
- 1cup chopped avocado, small squares shopping list
- 1cup cucumber small squares shopping list
- 1 tsp seasalt shopping list
- 1/2 tsp pepper shopping list
- 1 cup fresh lemon juice shopping list
- water from seafood mix(when boiled do not throw away) shopping list
- 1 pkg your favorite tostadas-preferrably Guerreros' shopping list
- mayo opt. shopping list
How to make it
- 1st bring to low boil seafood mix
- add shrimp to lemon juice (w/no seeds) let sit till they look cooked
- combine all ingredients in large boil.
- when seafood mix is cooked take out & let cool
- let water from boil cool as well
- once cool, chop in to bite size pieces
- combine all ingredients including shrimp with juice
- if shrimp is too big.. chop in 1/2.
- stir.
- mayo can be added to your tostada right before you add ceviche to it for an added taste.. if not your thing.. then dont add.
