Original ceviche takes fish & crab, everyone has their own spin on it.. but i make mine kind of like the shrimp cocktail.. which is very delicious as well.. very similar..you will like both not matter which you make for dinner.

Ingredients
  • 2lbs med or large shrimp (peeled & deveined)
  • 2lbs seafood mix(fresh if possible)
  • 1/2 lb baby octopus(optional, already in seafood mix, but this fresher)
  • 2 cans abalone
  • 2 1/2lbs of imitation crab meat chopped
  • 1/2 cup chopped red onion
  • 1 cup chopped cilantro
  • 1cup chopped red tomatoe med size cuts
  • 1cup chopped avocado, small squares
  • 1cup cucumber small squares
  • 1 tsp seasalt
  • 1/2 tsp pepper
  • 1 cup fresh lemon juice
  • water from seafood mix(when boiled do not throw away)
  • 1 pkg your favorite tostadas-preferrably Guerreros'
  • mayo opt.

Directions
  1. 1st bring to low boil seafood mix
  2. add shrimp to lemon juice (w/no seeds) let sit till they look cooked
  3. combine all ingredients in large boil.
  4. when seafood mix is cooked take out & let cool
  5. let water from boil cool as well
  6. once cool, chop in to bite size pieces
  7. combine all ingredients including shrimp with juice
  8. if shrimp is too big.. chop in 1/2.
  9. stir.
  10. mayo can be added to your tostada right before you add ceviche to it for an added taste.. if not your thing.. then dont add.
