I got this recipe form an old Family Circle Magazine... I have boxes of recipes on wads of paper that I am trying to get organize.... as i am going through them .. I keep saying oh this sounds good.... I have forgotten that either I saved the recipe ... More

Ingredients
  • 1/2 lb. thin spaghetti, regular or gluten free
  • 1/4 cup extra virgin olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, chopped
  • 4 fresh plum tomatoes, cored and chopped ( canned tomatoes can be substituted)
  • 1 teasp. dried oregano
  • 1/2 teasp. salt
  • 1/3 cup dry white wine
  • 4 ounces feta cheese, crumbled
  • 1/8 teasp. cracked black pepper

Directions
  1. bring 4 quarts water to a boil.
  2. cook spaghetti according to direction
  3. drain pasta...reserving 1/4 cup of the cooking water
  4. while the pasta is cooking heat olive oil ina large skillet over medium heat
  5. add onions and cook 3 minutes
  6. add garlic and cook 1 minutes stirring so garlic does not burn
  7. stir in tomatoes, oregano, and salt
  8. cook for 2 minutes
  9. add wine and cook 1 minute
  10. add feta cheese, spaghetti, and reserved cooking water and toss with pepper.
  11. serve immediately
