Lime Shrimp With Coconut Rice Recipe
A quick weeknight meal in 30 minutes that is tasty and out of the normal routine

Ingredients
  • 1 cup rice
  • 5 tbs butter
  • 1 Lime, juice and rind
  • 1/4 cup Cilantro
  • 1 ½ Coconut Milk
  • 1 cup water
  • 6 cloves Garlic, minced
  • 8 Stalks Green Onion, white and light green parts, thinly sliced
  • 1 lb Shrimp, peeled and deveined
  • 3/4 cup peas
  • 1/2 water chestnuts
  • Salt to taste

Directions
  1. Heat 1 tbs butter till melted, add rice and coat in the butter
  2. Add water and coconut milk; bring to a boil over medium heat
  3. Reduce heat and let simmer till all liquid is dissolved
  4. In a large skillet, melt the 4 tbs butter then add garlic, lime rind and all the juice from the lime
  5. Add the shrimp, green onions, peas and water chestnuts and cook until the shrimp are opaque
  6. Add salt and half of the cilantro to the shrimp and toss
  7. Add remaining cilantro to the rice.
  8. Serve shrimp on top of rice, garnish with green onion stem
