How to make it

  • Heat 1 tbs butter till melted, add rice and coat in the butter
  • Add water and coconut milk; bring to a boil over medium heat
  • Reduce heat and let simmer till all liquid is dissolved
  • In a large skillet, melt the 4 tbs butter then add garlic, lime rind and all the juice from the lime
  • Add the shrimp, green onions, peas and water chestnuts and cook until the shrimp are opaque
  • Add salt and half of the cilantro to the shrimp and toss
  • Add remaining cilantro to the rice.
  • Serve shrimp on top of rice, garnish with green onion stem
