Lime Shrimp With Coconut Rice

- 1 cup rice shopping list
- 5 tbs butter shopping list
- 1 lime, juice and rind shopping list
- 1/4 cup cilantro shopping list
- 1 ½ coconut milk shopping list
- 1 cup water shopping list
- 6 cloves garlic, minced shopping list
- 8 Stalks green onion, white and light green parts, thinly sliced shopping list
- 1 lb shrimp, peeled and deveined shopping list
- 3/4 cup peas shopping list
- 1/2 water chestnuts shopping list
- salt to taste shopping list
How to make it
- Heat 1 tbs butter till melted, add rice and coat in the butter
- Add water and coconut milk; bring to a boil over medium heat
- Reduce heat and let simmer till all liquid is dissolved
- In a large skillet, melt the 4 tbs butter then add garlic, lime rind and all the juice from the lime
- Add the shrimp, green onions, peas and water chestnuts and cook until the shrimp are opaque
- Add salt and half of the cilantro to the shrimp and toss
- Add remaining cilantro to the rice.
- Serve shrimp on top of rice, garnish with green onion stem
