How to make it

  • wash potato, grate with a fine box grater.
  • mix in the egg (i reserve the rest of the egg to scramble and eat with the cakes).
  • mix in the salt and wheat flour.
  • spray pan with a vegetable oil and saute until the bottom is golden brown.
  • flip over, cook the other side and enjoy.
  • this recipe makes 2 pancakes.
  • for savory tater cakes, mince 1/2 a white onion and add it to the mix.
  • for spicy savory tater cakes, follow the above recipe and mix with with 1/2t (or to taste) of crushed red pepper. i also add some wasabi powder to mine. i also add a bit extra salt, too.
  • for spicy savory sweet tater cakes, follow the above recipe but serve with maple syrup.
  • for tater cakes that taste like french toast sticks, follow the above recipe and grate some cinnamon over the cake and sprinkle on some sugar, serve with maple syrup.
  • i haven't tried other combinations just yet but will update this recipe when i have; i expect a variety of small diced/medium diced vegetables would be a good addition. possibly some corn, additional spices and canned beans for a southwestern patty.
