  • Lentil Beans

Directions
  1. Rinse and pick over lentils for small stones and twigs.
  2. They do not require presoaking.
  3. Place them in a saucepan with double the amount of water.
  4. Add onion, carrot and garlic, if desired.
  5. Acid ingredients such as wine, tomato or lemon juice will slow the cooking process.
  6. Adding salt to the water tends to split the hulls.
  7. Check the lentils often for tenderness.
