Chunky Chicken Spaghetti Sauce Recipe
Made spaghetti one day with just one small can of tomato sauce and it was a big hit. Turns out, my family wasn't a big fan of sauce but a HUGE fan of those tasty tidbits hiding in it. So I just made more tidbits and less sauce.

  • 1 can of hunts tomato sauce (15 oz)
  • 2 cans diced tomatoes (14.5 oz)
  • 2 large portabello mushrooms
  • 2 large red bell peppers
  • 1 large white onion
  • 4 medium chicken breasts
  • 1 tbs of oil
  • 1/2 teaspoon Italian seasoning
  • 1 bay leaf
  • 1 tsp salt
  • 1/4 cup of apple cider vinegar

Directions
  1. In a large frying pan heat olive oil while slicing raw chicken into bite size chunks.
  2. Cook chicken with salt over medium heat thoroughly and set aside.
  3. In a large sauce pan toss drained diced tomatoes and let simmer over medium heat with apple cider vinegar for 5 minutes (tomatoes are one type of vegetable that actually benefit from cooking. This process makes the tomato sweeter).
  4. Dice onions, bell peppers, mushrooms.
  5. Add veggies and tomato sauce to the sauce pan along with the Italian seasoning and bay leaf.
  6. Simmer for another 10-15 minutes then add chicken.
  7. Allow to simmer for 5 more minutes and then remove bay leaf.
  8. Serve over your favorite pasta and enjoy.
