How to make it

  • Use heavy oven-proof non-stick 10" skillet.
  • Cook cubed potatoes in 2 T oil, then set aside in bowl to add later.
  • Add 1 T oil to same skillet and cook onion and green pepper over medium heat, cook and stir until tender.
  • Add garlic; cook one more minute. Stir in potatoes and ham; cook until thoroughly heated.
  • REDUCE heat to medium-low; add eggs, salt and pepper.
  • Cook about 5 minutes or until eggs are firm on the bottom.
  • Top with cheese; place in oven and bake at 350 degrees for 5 to 10 minutes or until cheese melts. Cut into wedges. Serves 4.
  • Great with a side of fresh fruit and a big glass of juice.
