Simply Scrumptious Frittata Recipe
Just cook 4 cubed redskin potatoes in 2 Tbsp oil in large skillet til tender and golden before adding them to this hearty frittata. This was found in Gooseberry Patch Family Favorite Recipes cookbook, recipe by J. Valentine

Ingredients
  • 1 T veg oil
  • 1/2 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 1 to 2 cloves garlic, minced
  • 4 redskin potatoes, peeled, cubed, and cooked
  • 3/4 cup cubed cooked ham
  • 8 eggs, beaten
  • 1/2 t salt
  • pepper to taste
  • 3/4 cup shredded Cheddar cheese (or other variety for taste)
  • (Prep time and Cook time vary and overlap quite a lot)

Directions
  1. Use heavy oven-proof non-stick 10" skillet.
  2. Cook cubed potatoes in 2 T oil, then set aside in bowl to add later.
  3. Add 1 T oil to same skillet and cook onion and green pepper over medium heat, cook and stir until tender.
  4. Add garlic; cook one more minute. Stir in potatoes and ham; cook until thoroughly heated.
  5. REDUCE heat to medium-low; add eggs, salt and pepper.
  6. Cook about 5 minutes or until eggs are firm on the bottom.
  7. Top with cheese; place in oven and bake at 350 degrees for 5 to 10 minutes or until cheese melts. Cut into wedges. Serves 4.
  8. Great with a side of fresh fruit and a big glass of juice.
