Ingredients
  • 4 medium sweet potatoes, peeled and cut into 1 inch cubes
  • 2 tbls. water
  • 1/4 cup olive oil
  • 2 tbls. lemon juice
  • 2 tbls. Worcestershire sauce
  • 2 cloves garlic, finely chopped
  • 1/2 tsp. pepper
  • 1/4 tsp. salt
  • 1 1/2 lb. skinless boneless chicken, cut into 1 inch cubes
  • 2 sweet onions, cut into chunks
  • Chipotle Molasses Butter
  • 1 stick butter, softened
  • 2 tbls. molasses
  • 2 tsp. chipotle in adobo sauce, finely chopped
  • 1 tsp. lemon peel, grated

Directions
  1. Heat grill to medium high
  2. Put potatoes and water in microwave safe dish
  3. Cover and microwave on high for 6-8 minutes (until potatoes are tender)
  4. Drain and set aside
  5. In mixing bowl, add oil, lemon juice, Worcestershire sauce, garlic, salt and pepper and mix to combine
  6. Put 1/2 of mixture into resealable bag with chicken
  7. Put other half of mixture into another resealable bag with onion and potato
  8. Toss to coat and refrigerate 30 minutes
  9. In mixing bowl, add all Chipotle Molasses Butter ingredients and mix well
  10. Refrigerate until serving
  11. Drain and discard marinade from both bags
  12. On 12 skewers, either metal or soaked wooden, thread chicken, sweet potato, and onion
  13. Grill, uncovered 6-8 minutes on each side
  14. Serve with butter on side
