Chicken and Sweet Potato Kabobs

- 4 medium sweet potatoes, peeled and cut into 1 inch cubes shopping list
- 2 tbls. water shopping list
- 1/4 cup olive oil shopping list
- 2 tbls. lemon juice shopping list
- 2 tbls. worcestershire sauce shopping list
- 2 cloves garlic, finely chopped shopping list
- 1/2 tsp. pepper shopping list
- 1/4 tsp. salt shopping list
- 1 1/2 lb. skinless boneless chicken, cut into 1 inch cubes shopping list
- 2 sweet onions, cut into chunks shopping list
- Chipotle molasses butter shopping list
- 1 stick butter, softened shopping list
- 2 tbls. molasses shopping list
- 2 tsp. chipotle in adobo sauce, finely chopped shopping list
- 1 tsp. lemon peel, grated shopping list
How to make it
- Heat grill to medium high
- Put potatoes and water in microwave safe dish
- Cover and microwave on high for 6-8 minutes (until potatoes are tender)
- Drain and set aside
- In mixing bowl, add oil, lemon juice, Worcestershire sauce, garlic, salt and pepper and mix to combine
- Put 1/2 of mixture into resealable bag with chicken
- Put other half of mixture into another resealable bag with onion and potato
- Toss to coat and refrigerate 30 minutes
- In mixing bowl, add all Chipotle Molasses Butter ingredients and mix well
- Refrigerate until serving
- Drain and discard marinade from both bags
- On 12 skewers, either metal or soaked wooden, thread chicken, sweet potato, and onion
- Grill, uncovered 6-8 minutes on each side
- Serve with butter on side
