How to make it

  • Chop chicken as desired for salad.
  • Chop cold cooked cauliflower ( not cooked till mushy but tender yet firm )
  • Mix chicken and cauliflower
  • Bind with drsired amt of mayonniase
  • salt, pepper, curry powder to taste
  • Serve as is or chill

    Sounds really delicious and clever of the cook to get the super healthy veggie(s) into the combination. (I do the same thing with my dh when throwing burritos together: after the salsa and chicken are in the burrito, I grab a handful of coleslaw veggies w/o mayo and top with cheese!
